Confetti Coconut Milk Fruit Smoothie (AIP Paleo)

Whenever food tastes good and looks adorable, I feel like I’ve hit the jackpot in the kitchen. So, I’m happy to share my recipe for a favorite new treat which I like to call the Confetti Smoothie! I call it a Confetti Smoothie because it’s pink splashed with blue, purple, and red flecks that look like confetti pieces (without the artificial food dye!)

Confetti Smoothies are a great dessert or breakfast-ish snack if you pair it with some protein. It is almost like yogurt which I miss very much on AIP Paleo.

It’s AIP Paleo compliant– friendly for the gut and helps with autoimmune inflammation by combining the fruits with fat and cinnamon, which helps to regulate your blood sugar levels (which in turn regulate your insulin which helps regulate your other hormones).

Prep time: 5 minutes

Servings: 2

Ingredients:

  • 20 blueberries
  • 4 strawberries
  • 8 pieces frozen mango*
  • 8 pieces frozen pineapple*
  • 1 banana
  • 1/2 tsp of cinnamon
  • 1/2 can coconut milk (usually 13.5 oz)– you want the “creamy” part as well as some of the water from the can, about 2-3 tablespoons of the water.
  • 1/2 tbs honey**

*could be fresh, but I’m lazy and only have frozen

**usually you don’t need honey because it’s so sweet, but if you want it extra sweet, add just a bit.

Directions:

  1. Place all of the ingredients into a blender (I use a bullet blender) in the following order: blueberries, strawberries, mango, pineapple, banana, cinnamon.
  2. Add the coconut milk last so that it fills in the gaps of the blender, rather than clumping up at the bottom. This order allows for the best blending.
  3. Blend until smooth and entirely pink with some confetti specks! You may need to stir it once or twice if it doesn’t blend the right way.
  4. Taste test– add honey if you want it to be sweeter. You could also add more cinnamon.
  5. Enjoy! Store extra in an air tight container in the fridge. Consume within 2 days.

I know how difficult it is to find joy when being on AIP Paleo for so long, but remember to take care of your spirit as much as you take care of your gut!
