Paleo Vegan Salad with Creamy Tahini Dressing

Tahini Salad Dressing Recipe:

  • 2 tbs tahini (unsalted)
  • 1/4-1 cup water
  • 2-4 tsp lemon juice (optional)
  • sea salt (to taste)
  • pepper (to taste)

Instructions:

  1. Add tahini to mixing bowl and slowly add water in 1/4 cup increments until desired consistency. At first the tahini might separate in the water, but keep mixing until a thicker paste is created. Use less water for a creamier dressing, add more water to thin its consistency.
  2. Add salt and pepper to taste.
  3. Add lemon juice 1 tsp at a time until desired taste. Add additional salt and pepper if needed.
  4. Enjoy!

I’ve become obsessed with this salad dressing, so much that I eat it every day– it can be so creamy with a satisfying nutty flavor. Tahini has some great health benefits, too! Full of good fat and various minerals and vitamins, you can indulge and feel better with it!
